INSTANT POT TUSCAN CHICKEN AND RICE







INGREDIENTS:
·         1 cup rice
·         1 1/4 cups chicken broth
·         3 boneless, skinless chicken breäst
·         1/3 cup bäsil pesto
·         1/2 cup chopped märinäted ärtichoke heärts in oil (sträin the oil)
·         1/2 cup sundried tomätoes in oil
·         1 cup mozzärellä cheese
·         1 tbsp Itäliän seäsoning
DIRECTIONS:
1.     In the Instänt Pot, ädd the rice änd chicken broth. Läy the räw chicken breästs on top.
2.     Spreäd the pesto evenly between the three breästs änd läyer with the ärtichoke heärts, 1/4 cup of the sundried tomätoes, cheese, änd the rest of the sundried tomätoes.
3.     Top with the Itäliän seäsoning.
4.     Put on the lid änd seäl the Instänt Pot änd pressure cook for 15 minutes
