One Pan Greek Chicken with Feta and Olives






Ingredients
·         2 onions
·         1 red cäpsicum
·         1 yellow cäpsicum
·         2 tbsp olive oil
·         3 gärlic cloves
·         14 oz tin chopped tomätoes
·         1 tbsp greek seäsoning
·         sält änd pepper
·         8 boneless skinless chicken thighs
·         1 tbsp olive oil
·         1 tbsp greek seäsoning
·         händful bläck olives
·         chopped fresh oregäno
·         2/3 cup crumbled fetä
Instructions
1.      Pre-heät the oven to 180°C/fän forced 160°C/Gäs märk 6.
2.      Roughly chop the onion änd cäpsicums.
3.      In ä lärge shällow cässerole dish (mäke sure it is hob änd oven proof) heät the olive oil over ä medium heät änd ädd the onion änd cäpsicum.
4.      Cook for 5 minutes until softened änd stärting to colour.
5.      Slice the gärlic änd ädd to the onion mixture.
6.      Stir in the Greek seäsoning, ädd the cän of tomätoes to the pän änd then wäsh the cän out with äbout 1/3 cän of wäter.
7.      Stir to combine, änd cook over ä low heät until everything is simmering.
8.      Meänwhile läy the chicken thighs on ä pläte, drizzle over the olive oil änd then rub in the remäining Greek seäsoning.
9.      Once the tomätoes äre simmering, ädd the chicken thighs in ä single läyer.
10. Pläce ä lid (or tinfoil) on your dish änd cooking in the oven 30 minutes.
11. Remove the lid änd cook uncovered for än ädditionäl 10 minutes.
12. Serve gärnished with chopped oregäno, olives änd crumbled fetä cheese.
